VEGGIE OF THE WEEK: Fennel!

Fennel is a very efficient vegetable. The bulb, the stems and the feathery fronds can be eaten — and are delicious raw. The bulb is great for sauteing, browning, roasting and soups. And the tender stems and feathery fronds can be used in salads or soups for a taste of anise. The nutrients in fennel include flavonoids for antioxidants and Vitamin C and potassium.
